Specialty Foam Control Agents
In the food-processing industry foam can occur at various points in a production chain. This is usually caused by surface active substances such as proteins, fatty acids and sugars. The resulting foam affects the product properties in various ways and greatly disrupts the process. Wacker Silicones has an answer to these problems the Silfar and Silfoam lines of antifoam agents which have been specially developed for the food-processing industry. These products can be used as selected process auxillaries or even direct active ingredients.
Silfar and Silfoam are available as high purity silicone fluids, highly efficient compounds or as antifoam emulsions that are specially tailored to water based applications. These antifoam agents meet the highest regulatory requirements and certification conditions.


CYCLODEXTRINS

Amtrade are the agents for their range of cyclodextrins, alpha, beta and gamma – representing a dextrose ring containing 6, 7 and 8 dextrose molecules respectively. Cyclodextrins can be used to protect susceptible ingredients e.g. fats and oils to oxidation. Mask strongly flavoured ingredients that would impart an objectionable off-flavour into a formulated food product and to improve water solubility of more hydrophobic ingredients used in aqueous systems. The ring shape of the cyclodextrin acts as a ‘bucket’ into which the active ingredient is filled. Under FSANZ, both alpha and gamma cyclodextrin are approved as novel foods. Further to this, Wacker has also developed a range of cyclodextrin complexes where the active ingredient is already entrapped within the cyclodextrin ring. This includes ‘‘Omega Dry’’ a complex of omega 3 fatty acids and gamma cyclodextrin which improves the sustainability of these oils that a prone to oxidation plus Cavamax WB/Gymnema complex to mask the bitter tastes of the gymnema.

Sonneborn White Mineral Oils are highly refined mineral oils that consist of saturated aliphatic and alicylic nonpolar hydrocarbons. Sonneborn White Oils are chemically and biologically stable, non-comedogenic and do not support bacterial growth.

MICROCRYSTALLLINE WAXES
